Today I will share with you one of my favorite recipes. I am all about stuffed peppers lately, and who doesn’t love lasagna? With this recipe, I can enjoy lasagna but don’t feel the guilt or bloat because there is no pasta in it. And you know what? I don’t miss the pasta at all. Really!
Work is getting busy. I’m finally making myself do a little work in the evenings. Well, so last night was my first night, but it’s just the beginning. Part of my job is working on a huge directory we put together. There are 200 plus advertisers that I need to collect materials from, then put everything together and make sure it’s all correct. By the end of September, I will be working 60 hour weeks, so I need to stay as caught up as I can now. Enough of this being lazy…I need to work extra now so hopefully I can save myself a few extra hours later. I certainly have plenty to do now, so there is no sense putting it off. Ahh…the life of a procrastinator…
I have decided Overeaters Anonymous is not for me. It sounds like it is very religion based, even though they don’t support any particular denomination. I know what I believe, but am not particularly “religious” even though I go to church (mostly so the kids experience it). I do have some self-help books that I bought a few years ago. I need to dust them off and put them to use.
On September 3, I am starting my Healthy30. I have an online friend who says she will do it with me, and my sister seems ready for a change. So hopefully I will have some support to help me through this. I will spend some time putting together my personal rules and hopefully have a plan to make it easier to stay on track. I’ve done it before, so I know I can do it again. I am ready for change. I am ready to do this!
Big weekend coming up here, so I’m not sure how much I’ll be online. Saturday I am going to the Minnesota Renaissance Festival with my sister-in-law and a friend I haven’t seen much of in years. It will be fun, and I’m not going to think about how fat I feel. Really. Sunday I have to take the girls for haircuts before school starts. Then Monday is the big Tim McGraw concert! There won’t be much downtime, which I don’t like, but it’ll be a fun weekend, which I need.

Lasagna Stuffed Peppers
The recipe actually isn’t mine, so I will give credit where credit is due.
First, start out my making the meat sauce. Recipe found here. I omit the mushrooms because I don’t like them. I also usually leave out the parsley and red pepper flakes because they aren’t usually in my cupboard. This meat sauce is wonderful and is extremely versatile!
The pepper recipe can be found here. I use cottage cheese instead of ricotta, because I don’t like ricotta.
These peppers are amazing! Great lasagna flavor without the guilt!
