Okay Mother Nature, enough is enough! Yesterday, May 2 (May 2!!!!), we woke up to another pile of snow on the ground. Here is a picture of Marcus. You can’t see the pile of snow he’s standing on, so it’s deeper than this. I heard the official snow fall amount was 18 INCHES!! This is extremely rare for us in Minnesota. We have been hit with storm after storm since February. Everyone, even the snow lovers, are tired of this. It’s hard to believe that just last weekend, the kids were riding bikes while wearing shorts and flip flops. Sigh…

Smoothies are such an easy and yummy way to get some great nutrition. Even winter weather won’t keep me from enjoying this cool treat or meal! I haven’t ventured into complex recipes because I need to keep it as quick and easy as possible. My recipes are fairly basic, but I like to share the winning combinations. 🙂

I almost always put spinach in my smoothies. I can’t taste it at all, and it’s a great way to give it a nutritional boost for just a few calories. It is 14 calories for 2 CUPS of spinach! Can’t beat that!

2 cups spinach
1 banana
1/2 cup sliced peaches (mine were frozen)
1 scoop protein powder (mine was vanilla)
1/2 cup almond milk

Pineapple Lemon Smoothie

I haven’t posted a recipe in quite awhile, and just made a new smoothie that is pretty tasty, so I thought I’d share. I had some lemon leftover from a pie recipe (not healthy!) that I made for Easter. I wanted to find way to use it up since I hate letting food spoil or wasting what we have.

I imagine this would be good with some chia seeds or some nuts. I looked at chia seeds in the store the other day, and they’re just not in the budget yet. Being unable to buy certain ingredients will not sway me…I will continue to eat as healthy as I can given our financial constraints.

5-6 pieces fresh pineapple
1 slice lemon, I left the peel on
1 frozen banana

Healthier Peanut Butter Chocolate Smoothie

I made a quick run to the grocery store last night while Cameron was at Girl Scouts. I didn’t have much time, but knew I needed to pick up a few healthy items or today’s diet would be disastrous. A bunch of spinach was an impulse purchase. I’ve been hesitant to put it in my favorite smoothie, but decided to suck it up and try it this morning. I really liked it and couldn’t taste the spinach at all! Plus it felt great to start my day with some veggies. Don’t let the greenish tint fool you…it was delicious!



Here is my basic recipe, although measurements are approximate.

Chocolate Peanut Butter Smoothie

The pizza aftermath continues. I am having a hard time getting back on track. This is exactly why I need to be more strict with myself. I can’t have meals like that if I want to reach my goals. At least not yet. Plus I am a bigtime emotional eater, so last night was anything but healthy.

This morning I woke up and wanted something sweet. But it needs to be healthy, so I threw together a chocolate peanut butter smoothie. It turns out a bit different every time because I don’t measure, but here is my basic recipe.

I also want to try this with a bit of spinach added, but haven’t yet. This is also my smoothie of choice when I want ice cream. It’s chocolately and yummy and the same consistency, so it really helps with the craving.
